Egg Curry or Egg cravy

Egg curry is one of the best recipe for my family Me, My hubby and my little angel We three love to have this egg curry with chapati or roti. So lets qucikly have a look at the recipe..

Egg - 3
oil - 1 tbsp
Mustard seeds - 1/2 tsp
Fennel seeds - 1/2 tsp
Curry leaves - 1 spring
Onion - 1/2 cut into lenghtwise
Garam masala - 1/2 tsp
Turmeric powder -  a pinch
Pepper powder - optional

To make egg curry paste:

onion  - 2 [cut into cubes]
Tomato - 1 [cut into cubes]
Garlic - 4 pods
Turmeric - 1/2 tsp
Salt to taste
Oil - 1 tbsp
coconut - 1/4 cup grated
curry masala powder - 1 1/2 tbsp

[ If you dont have curry masala powder, add 1 tbsp coriander and cumin powder  each and 1 tsp garam masala, red chilli powder - 1 tsp or as per your taste]


Boil eggs, remove shell and cut them into half.

Egg curry

To make egg curry paste:

Place pan on your stove, add oil, garlic, onion, tomato, turmeric, salt . Mix all ingredients well. Close it with lid and cook for 4 - 5 minutes till onions are transparent and tomatoes are cooked.

Now add curry powder and coconut. Mix well. Switch off the flame. Allow them to completely cool down.
Transfer into blender and grind it to smooth paste and keep it aside.

Place pan on your stove. Add oil. Once it is hot, add mustard seeds, fennel seeds.Allow to crackle.

Egg curry

Add curry leaves, onion and fry till they are light brown in colour.

Reduce the flame to very low and add turmeric powder and garam masala powder. Mix them well.

Add cut eggs into fried onion and shallow fry egg both side carefully without disturbing wgg white and yolk. You could get support of spoon and spatula to turn them easily. For more detail watch Video.

After 2 minutes add the ground onion paste along with 3/4 cup water [around 180 ml].

Dont mix the paste with egg using spatula. the eggg yolk may seperate. Best way is, hold pan in your hand and slightly shake it. You will notice the paste would mix well with egg without disturbing eggs.

Now check for salt and add required. Allow to cook for 5 minutes in medium flame and 5 minutes in low flame.

Dont over cook the masala more than the time mentioned. other wise the egg make break as it was already boiled.

Your Egg curry is ready. Garnish it with some chopped coriander leaves and serve it hot with roti, chapati, phulka, parata, naan and also with Idli.
