   Veggie  Idli upma


Idli is a famous south Indian breakfast. Usually When we have left over Idli’s we probably prepare idli upma. But how about making it veggie with colourful vegetables. This way it is not only delicious and also wholesome healthy dish best for breakfast or evening snack.





Ingredients:


Oil – 1 tbsp

Mustard seeds – ½ tsp

Channa dal – ½ tsp

Curry leaves – 1 spring
Red chilli - 1 

Coriander leaves or cilantro – chopped for garnishing

Onion – 1 chopped

Turmeric powder – ¾ tsp

Garam masala – 1 tsp

Green peas and carrot – ¼ cup [Cooked with salt]

Ildi – 4

Salt to your taste


Method:



Scramble the idlis into small pieces with your hands and keep it aside.

In a pan add oil, Once it is hot add mustard seeds, allow it to pop up.

Add channa dal and fry till they are golden brown.

Now add curry leaves, red chilli, onion, turmeric and saute them for 2 minutes till they are golden brown.

Add cooked veggies,garam masala and mix well together with onion mixture.

Now add scrambles idli’s and again give a nice stir until all ingredients well combined and add salt to your taste.


Note: Make sure that you are adding right amount of salt as we have already added salt in veggies and idli batter. Taste the upma and add salt accordingly.


Now cook it for just 2 minutes and transfer to serving bowl.


Garnish with coriander leaves and serve hot with sambar and chutney.


You could eat it as it is without any side dish as we have added veggies and garam masala.
